Market Eton Mess

 

History

Eton Mess is a traditional English dessert using fruit (usually strawberries), mashed up meringue and vanilla cream, in it's simplest form anyway. It originated in the 19th century at Eton college and I have heard a few stories surrounding it’s name including a pavlova dropped on the floor then picked up and mixed with cream hence the name mess!

 

Ingredients

Meringues either home-made or shop bought. The amount depends on how you would like the consistency.

500ml Cream

450g Fruit of your choice, always fresh and preferentially seasonal.

Coulis, Just a splash to add colour and a little flavour.

 

Method

  1. 1. Whether you using store bought or not you should have meringues by now simple smash them up to rustic chunks. This is great for the kids!
  2. 2. Chop up your desired fruit or even make a puree with some of it for a texture difference.
  3. 3. Whip your cream until relatively firm. Add your coulis to make a pinkish cream
  4. 4. Mix together to gain you desired consistency. Serve! Easy as that!
