Oozy Rich Chocolate and Blueberry Brownie


Congratulations, you have found the recipe of our biggest seller at Como Street Café, it is a recipe I developed which is FULL of amazing great quality, palm oil free chocolate which has unsweetened blueberries to balance it out. It is important to use good quality chocolate, use 50% (as I find 70% is to rich). It is also important to be a real chocolate lover! It is also the same recipe you can see me create at the first ever Chocolate and Coffee show in Auckland’s Cloud on 3rd and 4th May 2014

 

Ingredients – Serves 6-12 dependent on your portion size.

185g Butter

185g +50g for later 50% cocoa Palm Oil Free Chocolate

85g Flour

40g Cocoa Powder

50g White Chocolate

3 Eggs

270g Caster Sugar

150g Blueberries Frozen

 

Method

  1. 1. Cut ice cold butter into cubes and melt on a double boiler with 185g of chocolate.
  2. 2. Sift the flour and cocoa powder through a sieve.
  3. 3. Chop 50g of white chocolate and the other 50g dark chocolate.
  4. 4. Separately beat the eggs and sugar until they become creamy and pale.
  5. Pour in melted chocolate over the egg mix and gently fold in together.
  6. 6. Fold in the cocoa and flour.
  7. 7. Add the chopped chocolate and the blueberries.
  8. 8. Put into an oven at 160⁰C for 25 minutes. When it is ready the top should have a crust whilst the other can just about withstand the pressure of your hand lightly pressed on top, you will get used to this test
