Dukkah

 

This is a great nut and spice blend that is ever more popular in restaurants these days. There are multiple uses including a dip with olive oil for bread or as a crust for a full flavoured lamb skewer or loin. It will be yellow so is a great colour as well as tasty to eat. Once you have tasted a little you will not be able to stop eating it! Finally you can buy this in the shops these days but it is so quick, easy and cheaper to make yourself.

 

Ingredients –makes 1kg (last ages in sealed container)

50g Coriander seeds

50g Cumin Seeds

50g Fennel seeds

25g Black pepper peppercorns

100g Hazelnuts

100g Macadamia nuts

50g Almonds

50g Pistachios

25g Sea or Rock salt

50g Turmeric

 

Method

  1. 1. In a fry pan, with NO oil toast the seeds and peppercorns until well scented and slightly coloured.
  2. 2. Meanwhile put all the nuts in a tray in an oven again until well coloured but no black.
  3. 3. Now with the spices you can either crush well in a pestle and mortar or put them in a blender.
  4. 4. If using the blender, process the seeds and salt until they are finer but not dust then add the nuts and repeat ensuring the nuts keep as chunky and rustic as you would like.
  5. 5. Add the turmeric and pulse until the mixture is well combined and yellow in colour.
