This is a savoury version to the usual dessert recipe and you can use this recipe with the chicken liver recipes I have on the site.
1 Vanilla pod
1 Cinnamon Stick
- 1. Peel the pears and add to a pot big enough to fit the pear and cover with water. Add a split vanilla pod and the cinnamon stick.
- 2. Put the pot on full heat and when it is just below boiling point turn the gas down and allow it to poach.
- 3. When a knife can pierce the pear with only a little pressure all the way to the middle then it is ready so remove from the water and put it into the fridge to cool. Use as required.
NB an alternative to this is using red wine instead of water, this will give you a really red surface and white inside. It looks great!
