Savoury Baked Apples as a Garnish


These are a great garnish with pork, a real savoury tasting apple as oppose to your standard apple sauce.

 

Ingredients – Serves 4

3-4 Apples dependent on size (red is best maybe Brae burn)

50g Fresh rosemary

1/2 Tablespoon smoked salt, regular is fine

Pepper to taste

50g Fennel seeds

100g Butter, softened

 

Method

  • Preheat oven to 180°C
  • Wash, decore and cut each apple into 6-8 wedges dependent on the size of the apple.
  • Finely chop the rosemary.
  • In a bowl thoroughly mix all the ingredients and bake in the oven until the apples just become tender, you don’t want them to be soft or they will lose the texture quality.
